When we finally ran out of from scratch brownies I made last week it was a dessert day at our house. I cheated with my favorite tricks on spicing up a box mix and made a delicious Lemon Bundt Cake.
I used Duncan Hines lemon supreme mix, added a Jello lemon instant pudding mix, 1/3 a cup of fresh lemon juice, 1/2 cup melted Land O'Lakes salted butter, 4 large eggs and 2/3 C Fairlife milk plus a tsp of vanilla! Mix well and transfer to a well greased Bundt pan... place in an oven at 350 degrees for about 35-40 minutes. The cake is done when a tooth pick comes out clean but with a few crumbs attached. Let cool in the Bundt pan for 10 minutes and then transfer to a wire rack to cool fully before glazing. I prefer a thin glaze on this cake but of course, you can make you glaze any consistency.
My glaze was a mixture of Imperial Sugar powdered sugar, 1/4 cup of fresh lemon juice, zest of one lemon, vanilla and a little milk to thin out to the consistency I wanted. Place your cooling rack on a foil or parchment paper covered surface and apply your glaze. (Less mess to clean up) then transfer the cake to your favorite plate.
