Granny Smith Coleslaw: same ingredients two different slaws.

I love coleslaw as a side dish when the weather warms up, who am I kidding, I love coleslaw all the time. I love making dishes that I can repurpose as well. This coleslaw recipe can work two different ways! First I make it as a vinegar based coleslaw. I use a coleslaw mix, fresh squeezed lemon juice, one thinly slice Granny Smith apple, half of a large or one medium sized whole red onion thinly sliced, apple cider vinegar and olive oil. I mix equal parts of vinegar and olive oil until my mixture is desired wetness. I add the squeezed lemon juice, salt and pepper to taste.

This coleslaw is even better on the second and third day than the first. Then on day two or three I add two tablespoons of sweetened condensed milk and a half a cup of mayo to make my coleslaw into a creamy coleslaw to change it up. I never use exact measurements because I make this out of leftovers so it varies from time to time!
