Sheet Pan Nachos

Sheet Pan Nachos are a big favorite around my house for a quick dinner or a Girl’s Night! It’s also a fun dinner for you to let your kids go wild! I always mix up the protein I use to top these nachos but for this recipe I used baked mojito lime chicken and taco meat for my main proteins. To make mojito lime chicken, use raw chicken tenders or cut breasts into strips. Layer the chicken tenders on a baking rack on top of a aluminum foil covered sheet pan. Use McCormick Spice Mojito Lime seasoning packet and cover the tenders on both sides. I then squeeze lime juice on top as well. Bake at 350 for 25-30 minutes or until done (You can eat the strips alone one night and chop the remaining chicken for nacho topping later in the week).


Prepare taco meat per the packet instructions but don’t use the suggested water, use less so your meat is less liquid based, that way it doesn’t bleed all over your nachos. Prepare a large cookie sheet by covering with aluminum foil or parchment paper. Layer Tostitos tortilla chips to cover the entire space. Then the fun part... add toppings to your heart’s desire. I added Bush's Beans black beans, Old El Paso chopped green chiles, La Costeña sliced nachos, Rotel hot tomatoes, green onions, sweet peppers, green and red bell peppers and Kraft Natural Cheese pepper jack shredded cheese. Layer your cheese first, then add you toppings. Less is more. Make sure you leave enough room so you can still see it. If you layer too much your nachos will be soggy and not crispy. When completely assembled bake your nachos in a preheated oven at 425-450 for 8-10 minutes.

Make sure you’re keeping an eye on them. Your nachos are ready when your cheese starts to brown around the edges. I serve them straight on the sheet, hand out forks, small plates for sour cream or salsa to dip them in and call it a night!!! Make sure to pass our plenty of napkins as well!
