Posted from the first weeks of the COVID-19 pandemic shopping marathon... ”We’ve been too busy to stop and eat much of a lunch the past few days at the store (It’s been a lunchable, lunch meat on tortillas, or a bag of chips type of week for all of us). Tonight, I decided to make my version of The Pioneer Woman’s Spicy Dr. Pepper Pulled Pork to take to work and share with every, so maybe we can catch at least one good square meal”. I’ll link the original PW recipe at the bottom of this post.. I like to put my own spin on this recipe. (Not that Ree’s recipe isn’t perfect all on its own- fun fact... Did you know that Ree’s father in law Chuck used to run a branch of the Drummond Ranch right in Waurika Oklahoma? Chuck was a cherished customer at our grocery store Shelton’s during his time in Waurika. I always love her descriptions of him in her stories and posts... I can always hear his wonderful gravely voice in my head). I digress... here we go, back on track.
I always add in a can of Rotel tomatoes, a good layer of Kenny’s Cajun Seasoning, and a spoonful of Better Than Bouillon beef base for an added zip of flavor! Throw all of the ingredients in your crockpot and cook on low for 10 hours. I love the crockpot function on my Ninja Kitchen pressure cooker. This recipe makes a lot of pulled pork and i always love taking this recipe to work to share with coworkers on an especially busy day. We love this pulled pork on King’s Hawaiian buns or as a pulled pork taco with all of our favorite taco toppings and a little Head’s Country BBQ sauce to top it all off.
