My Favorite Pasta Salad
My favorite pasta salad! This side dish is perfect for every barbecue, potluck, or big gathering. It’s become a staple Fourth of July cookout addition whenever we go someone.
I’ve always gotten rave reviews whenever I bring it to an event. It’s my spin on a recipe given to me by a dear friend Cynthia who worked for us at Walters Hometown Grocery. I use the dressing recipe but put my own spin on the rest of the ingredients. I dice, one whole red bell pepper, one green bell pepper, one red onion, 1 cup of matchstick or shredded carrots, and 1 cup of chopped broccoli to two bags of Wacky Mac garden spiral pasta (cooked to al dente in salted water). The dressing is 2 cups of Hellmann's, 1 can of Eagle Brand Sweetened Condensed Milk, 1/2 C of Imperial Sugar, 1/2 C of BRAGG Organic Apple Cider Vinegar. Add salt and pepper to taste then mix all contents well, cover and chill overnight in the fridge to give all of the flavors time to mingle! I have been known to add chopped pickles (sweet or dill), small cubes of sharp cheddar cheese and bacon bits (shredded cheese works as well), fresh green onions, or dill into the mix when I feel like it.
