Hide and Seek Cheeseburgers: Trick your kids into eating more veggies.

Burgers are always a hit in my house, I think it’s actually one of my son Drew’s food groups. I think many of us expect burgers to just be a quick and easy no fluff type of meal but this year... sneak in a few ingredients to get your kiddos eating more veggies.

My trick is simple... finely dice onions and mushrooms to mix into your ground beef before you make your patties. (I also season my ground beef with Kenny’s Seasoning, chili powder, a splash of Worcestershire sauce and some diced garlic) I promise your kiddos won’t even notice the extra additions and it’s a great way to introduce some hot those veggies that are harder to sell your kids on! I also love to make fresh pico to top our burgers with. You can take an easy way out and use Rotel Tomatoes instead of diving your own as well. This pico is also what I use for my chicken taco recipe in the Family Meals Month recipe that I featured in September! Chop 1 red bell pepper, one green bell pepper, one onion of your choice, add one can of drained rotel, one diced jalapeño that has been seeded, throw in a handful of chopped cilantro... add the juice of one lime and salt and pepper to taste! Easy peasy and DELICIOUS on top of your favorite burger.
