Grilled Chicken Fajitas

When Cinco de Mayo was on a Taco Tuesday?! I think it’s a no brainer that we had TexMex on our dinner table! Instead of tacos we opted for Chicken Fajitas. First tenderize three boneless, skinless chicken breasts and then placed them in Claude’s Fajita Marinade for two hours. Chop up a variety of bell peppers and onions. Placed them in a Ziploc bag for easy seasoning, coat them with olive oil, sea salt, chili powder, cumin, a squeeze of lime juice and a little bit of oregano... seal the bag and give it a good shake to coat all of the peppers and onions in the seasoning mixture. Then set to the side until ready to cook.

After finishing seasoning, this is a good time to prepare some guacamole! Use 4 small, ripe avocados. Cut in half, remove the pit and then use a spoon to remove the avocado from the outer shell. Mash your avocados with a fork until mixed well. When opting for the easy route, add a can of drained original Rotel Tomatoes, Hatch Green Chile Co diced jalapeños, diced onion, and a packet of guacamole seasoning. I also add some sea salt, pepper, cumin and a squeeze of lime juice. Mix well, cover and refrigerate until ready to serve. I opt to grill our chicken outside on my propane grill, you may also use a baking method if you would like.

I love baking chicken on a cooling rack over a foil lined cookie sheet at 350 for 25 minutes. While grilling the chicken, I coated my Lodge Cast Iron skillet with some olive oil and placed on med high heat. Once oil was hot throw in prepared peppers and onions, cook until soft and your desired doneness. Once your chicken is cooked, place on a cutting board and cut against the grain, I find the chicken is easier to eat in fajitas this way. The same if you substitute beef flank steak for beef fajitas. It may be prepared and cut the same way for the best results. Serve with rice and beans and you have a delicious and flavorful meal for your family!
