Family Meals Month: Chicken Tacos



FIRST UP for FAMILY MEALS MONTH is.... Shredded Chicken Tacos!!!


(Remember serving size varies on how packed you like your tacos. I say it is realistically 6-8 tacos. In our home it serves 8, with chicken and toppings)


•Bring your chicken stock and 2 cups of water to a boil.

•Cut your boneless, skinless chicken breasts into cubes. Once water is boiling transfer your chicken to the broth/water mixture and boil for 20 minutes or until done.

•While chicken is cooking, prepare your Pico de Gallo topping. •Chop bell peppers, Roma tomatoes, onion, cilantro (finely diced) and jalapeño (optional). Transfer to a mixing bowl and proceed to pour lime juice over the mixture. Mix thoroughly. Salt and pepper to taste.


•When chicken is cooked through, drain and transfer to a mixing bowl. •Proceed to shred chicken using two forks. If you have a stand mixture, you can speed up the shredding process by mixing the chicken on medium with the standard mixing attachment. •Once shredded, return the chicken to your pot and add two cups of water and two packages of McCormick Spice Chicken Taco Seasoning and heat through.



• Build your tacos to your family’s taste, this is a fun time to let your kiddos take the reins and create their own. We top ours with Daisy Brand , Borden Cheese , and Pico de Gallo!! •see suggested sides to complete your meal!!!



•We dress up our On The Border Queso Blanco with a can of drained original RO*TEL and Hatch Green Chile chopped green chiles!!!
