When its one of those nights where I have a lot of things in the fridge that need to be cooked AND having to trick my 8 year old who isn’t always the buggest fan of leftovers at the same time.... Stir Frys are a great way to accomplish both of those things! First heat olive oil in a large skillet, sautée garlic, rough chop red and green bell peppers with some onions. I seasoned with sea salt and Zatarains Creole Seasoning.
Next add smoked sausage of your choosing and I threw in some cooked shrimp I had left over... toss together and heat throughout. Last but certainly not least throw in some baby spinach, cover with a lid and let the leaves wilt some. Once wilted, stir together and cook until you reach your desired doneness. Check your seasonings and add more to your preference. I served this with leftover potato casserole and broccoli, rice and cheese casserole.
