I don’t know about you but kabobs on the grill are my very favorite! Grab some raw shrimp with shells on in the frozen food section of your grocery store, thaw according to the directions on the package. Remove the shells and place in gallon sized Ziploc bag. Next, prepare your marinade (can also be used as a salad dressing). Combine the following ingredients. 1/2 cup extra-virgin olive oil
1/2 cup lime juice,1 tablespoon honey,
4 cloves garlic pressed using a garlic press, 1 teaspoon chili powder, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 - 1 teaspoon salt, 1/4 teaspoon cayenne, 1 tablespoon of apple cider vinegar. Shake well in a sealed jar to combine. Dump the entire contents into your Ziploc with shrimp melt marinate in the fridge for 1 hour. While marinating soak your kabob sticks in water. When assembling your kabobs, alternate your shrimp and pineapple. Lastly, sprinkle your favorite chili powder seasoning on top to give your kabobs a little extra flavor. Grill on your favorite propane, charcoal or grill pan until done. I served mine with asparagus and Spanish rice.
